Mincemeat Crumble Shortbread Slice

I couldn’t decide whether to make shortbread or mince pies so I decided to combine both of them and top it with a crumble topping.  Here is the recipe for those of you who would like to give it a go over the festive season.

Shortbread Mincemeat Crumble Slice


125g plain flour
25g ground almonds
50g caster sugar
110g Stork or butter
1tsp vanilla extract

Jar of mincemeat

Crumble Topping
100g plain flour
25g ground almonds
30g oats
50g Stork or butter
25g demerara sugar
1/2 tsp mixed spice


Pre-heat the oven to 180C and grease a rectangular baking tray (28cm x 17cm)

1. Mix together the dry ingredients then rub in the margarine/butter and vanilla extract until the the mixture starts to come together to form a ball of dough.

2. Press dough in to the baking tray and smooth down with the back of a spoon.

3. Spoon the mincemeat over the top of the shortbread dough.  Pop in in to the fridge while you make the crumble topping.

4. Mix the flour, ground almonds, sugar and mixed spice together.

5. Rub in the margarine/butter until it resembles breadcrumbs.

6. Stir in the oats and sprinkle on top of the mincemeat.

7. Bake for 30 minutes until the top is golden brown.

8. Cool in the tray, cut in to slices and dust with icing sugar.

Serve and enjoy.
