Frangipane Mince Pies

My daughter loves mince pies, the traditional kind with a pastry base and lid. After I had made a batch of those for her I wanted to make something a little different. So I decided to replace the lid with a Frangipane topping.

225g plain flour
Pinch salt
50g lard
50g margarine
Cold water
25g caster sugar

1. Mix flour, salt and sugar in a bowl and rub in fat with fingertips.
2. Using a knife to cut and stir, mix with cold water to form a stiff dough.
3. Wrap in cling film or freezer bag and place in the fridge to chill for 30 mins.
4. Roll out and use as required.



50g margarine
50g caster sugar
1 egg
50g ground almonds
25g plain flour
1/2 tsp almond essence

1. Cream together the margarine and caster sugar.
2. Add the egg, almonds, flour and almond essence.


Pre-heat the oven to 180 degrees celsius and grease a bun tin, or muffin tin for deeper filled pies.

3. Line the tin with circles of pastry and put a teaspoon of mincemeat in each one.
4. Top each one with a teaspoon of frangipane mixture.
5. Bake in the oven for 15 minutes.
6. When cooled dust with icing sugar and enjoy.
