Might have a go at these again this week.

Lucie loves baking

Today I made the Custard Cakes recipe from yesterday in to cupcakes, filled with lemon curd and topped with lemon butter icing.
Just to make them look pretty I decorated each cake with a homemade daisy with a sparkly blue centre.

Custard Cupcakes
140g margarine
140g caster sugar
3 medium eggs
100g self raising flour
25g custard powder
1tsp vanilla essence
1/2 tsp baking powder

Preheat oven to 160 degrees Celsius
1. Sift together the flour, baking powder and custard powder.
2. Cream the margarine and sugar until light and fluffy. Beat in the vanilla essence.
3. Add one egg at a time with a spoonful of the flour mix. Beat until all the eggs and flour are mixed in.
4. Spoon in to cake cases and bake in the oven for 20 minutes.

Lemon butter icing
200g icing sugar
80g butter
2tbsp freshly squeezed lemon juice
