Raisin and Cinnamon Cookies

After the success of the Chocolate Chip Cookies I was feeling brave so I made a second batch using raisins and cinnamon instead of the chocolate chips.

Raisin & Cinnamon Cookies

Ingredients:
100g margarine
75g soft light brown sugar
2 tbsp golden syrup
175g self raising flour
100g raisins
2 tbsp milk
1/2 tsp cinnamon
1/2 tsp vanilla essence

Method:
1. Pre-heat oven to 180 degrees celcius and line two baking trays with grease proof paper.
2. Beat the margarine and sugar until light and fluffy.
3. Mix in the vanilla essence, syrup, flour, cinnamon, raisins and milk until all combined.
4. Place spoonfuls of the mixture on to the baking trays and bake for 8-10 minutes.
5. Cool on a wire rack.
6. Enjoy

Tomorrow I am off to see Coldplay in concert with two friends and I have packed up some Chocolate Chip and some Raisin & Cinnamon Cookies for our journey.
