Chocolate Chip Cookies

Following a pretty poor attempt at cookies yesterday I decided not to be defeated and try again today.  Yesterday’s cookies all merged in to one rather large cookie whilst baking.  That would have been ok if they had tasted good but they didn’t. I am afraid there is no photo evidence of this baking disaster as they all ended up in the bin.

Today’s cookies
Unlike yesterday I decided to try the Chocolate Chip Cookies from the Be-Ro Home Recipes book, weighing each ingredient carefully and making no changes.  (Wellonly one.  I added some vanilla essence.)  Once they were safely baking inside the oven I watched anxiously to see if these would be like yesterday’s attempt.  You can imagine my relief when they emerged from the oven looking edible and how cookies should look.

Chocolate Chip Cookies

100g margarine
75g soft light brown sugar
2 tbsp golden syrup
175g self raising flour
100g chocolate chips
2 tbsp milk
1/2 tsp vanilla essence

1. Pre-heat oven to 180 degrees celcius and line two baking trays with grease proof paper.
2. Beat the margarine and sugar until light and fluffy.
3. Mix in the vanilla essence, syrup, flour, chocolate chips and milk until all combined.
4. Place spoonfuls of the mixture on to the baking trays and bake for 8-10 minutes.
5. Cool on a wire rack.
6. Enjoy
