Rocky Road

We’re off to a friends this weekend who are holding a music festival in their house and garden. I saw this as a great opportunity to get baking.

These little treats were very easy to make and proved to be very popular at the weekend.  As a no-bake treat I will be making them over the Jubilee weekend with my daughter.

200g dark chocolate (70%)
2-3 tbsp golden syrup
135g marg
100g mini marshmallows
200g digestives biscuits
raisins and cranberries
icing sugar (for dusting)

1. Crush the biscuits and Maltesers in to various sized pieces (uneven, not crumb)
2. Mix the biscuits, marshmallows, raisins, cranberries and Maltesers together.
3. Melt the marg, chocolate and golden syrup.
4. Stir in to the other ingredients until coated in chocolate.
5. Spoon in to a lined tin and press down lightly.
6. Chill in the fridge for at least 1 hour until set.
7. Cut in to small squares.
8. Dust with icing sugar and enjoy.

    Just like to say how tasty the Rocky Road and Fruity Flapjacks were and as one who gets to taste them first hand (Mum-in-Law), i’d recommend you all to try them.
