Banana Muffins

Today I decided I needed to use up the bananas in the fruit bowl.  To tell the truth I’m not a great fan of the humble banana but I’ve been trying my best to eat them whilst dieting. In all honesty I prefer to eat them with ice-cream or as an ingredient in a cake.

I thought that the Banana Muffins would be a great addition to the kids lunch boxes too for the week ahead.



200g self-raising flour
1/2 tsp baking powder
1 tsp bicarbonate of soda
1/2 tsp salt
3 bananas
150g caster sugar
1 egg
75g margarine
5tbsp icing sugar

Makes 16

Preheat the oven to 180 degrees centigrade


1. Sieve the flour, baking powder, bicarbonate of soda and salt in to a bowl.
2. In a large bowl mash the bananas then add the sugar and egg.  Beat well.
3. Melt the butter and leave to cool slightly before adding to the banana and sugar mixture.  Beat well.
4. Fold in the flour a spoonful at a time. Beat until smooth.
5. Spoon in to cake cases and bake  in the oven for 25 minutes.
6. Allow the muffins to cool.
7. Mix the icing sugar with water and drizzle over the cooled muffins.
