Friday Macaroons

I don’t usually bake on a Friday night. I usually get in from work, make tea and then pour a glass of wine before settling down in front the tv. Tonight was different though…I couldn’t wait to get home and add to my blog.

So I decided to make almond macaroons. Not the fancy little pink macaroons, as the process to make those is a bit more time consuming, and I wanted a quick bake.


This recipe makes 10 macaroons (which never last very long in our house)

125g ground almonds
175g caster sugar
1 tablespoon cornflour
2 medium egg whites
1/2 teaspoon vanilla extract
2 sheets of rice paper

1. Line a baking tray with rice paper.
2. Preheat the oven to 160 degrees centigrade/gas mark 3.
3. Mix the ground almonds with the sugar and cornflour in a bowl.
4. Whisk with the vanilla essence and the egg whites until white and starting to go firm.
5. Add the egg whites to the almond mixture and mix with a wooden spoon until you have a stiff dough.
6. Spoon 10 mounds of the mixture on to the rice paper, spacing them well apart. Press down gently.
7. If you like you can place a split almond in the centre of each one.
8. Bake in the oven for 20-25 minutes, until golden.
9. Leave to cool on a wire rack.
